Serves: 12 slices
- 300g mixed fruit
- 200g muscovado sugar
- zest of one orange
- 250ml of hot Earl Grey Tea
- 350g self raising flour
- 2tsp mixed spice
- 1 egg
- 50g melted butter
- Soak the fruit and sugar in the tea overnight.
- Line a 2lb loaf tin with greaseproof paper, pre heat oven to gas mark 3/160
- Add the flour, spice and orange zest to the soaked fruit (dont drain any remaining tea off)
- Stir until all combined.
- Add the egg and butter and beat to a batter like consistency
- Pour into lined loaf tin and bake for 75 minutes or until a knife inserted into the middle comes out clean.
