Lemon and Thyme Chicken risotto

An easy risotto recipe with the addition of an Oxo flavour pot to give it a real flavour boost

Serves: 6
  • 1 pack of chicken pieces cut up into bite size chunks
  • 1 onion
  • 8 mushrooms
  • 1 chorizo ring
  • Any leftover veg that you have, I had some peas and brocolli
  • 1 lemon and thyme flavour pot
  • 1 litre of stock
  • 500g box of risotto rice
  • Spinach
  • Parmesan (optional)
  1. Sautee chicken and chorizo, onion and mushrooms
  2. Add rice and allow to cook for a minute
  3. add the flavour pot
  4. Pour in stock and stir
  5. Add any additional veg
  6. I do this in my multi cooker so I dont need to stir it but if you are doing in a saucepan you will need to keep stirring.
  7. When cooked add spinach to top and allow steam to wilt the leaves
  8. Add parmesan shavings in you have any
