1¾ cup milk (you could use coconut milk if you wanted to dairy free)
1 teaspoon vanilla extract
2 large eggs
¼ cup coconut oil
½ cup shredded coconut
For the Glaze
150g of icing sugar
100ml of gin
a splash of tonic
squeeze of lemon
Instructions
Mix all the dry ingredients together in a bowl.
In a separate bowl whisk all the wet ingredients.
Mix two bowls together and beat until you have a batter like consistency (dont worry much about any small lumps, waffles are forgiving).
Cook as per your waffle maker instructions.
Stack waffles
Whilst still warm, ix together the glaze ingredients until all the sugar has dissolved. Serve in a jug to allow your waffle scoffers to pour into their waffle's little square holes.
