Pimms O'Clock Waffles

A summery dessert to kick off Pimms Season.

Serves: 8 waffles
  • 1¾ cup self raising flour
  • 1 tablespoons caster sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1¾ cup milk (you could use coconut milk if you wanted to dairy free)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ¼ cup coconut oil
  • Glaze:Pimms ./ Icing Sugar / lemonade
  • Garnish: Strawberries, cucumber, mint
  1. Mix all the dry ingredients together in a bowl.
  2. In a separate bowl whisk all the wet ingredients.
  3. Mix two bowls together and beat until you have a batter like consistency (dont worry much about any small lumps, waffles are forgiving).
  4. Cook as per your waffle maker instructions.
  5. Stack waffles
  6. In a bowl mix together the glaze ingredients, until the icing sugar is dissolved (I use Pimms for this to add maximum Pimms flavour). Then if you want to make it slightly thinner for drizzling, use some lemonade.
  7. Pour glaze over warm waffles and then garnish with fruit for full Pimms effect
