A Scotch Egg made with muffins, chocolate and a Cadbury's Creme Egg centre

Ingredients
  • 6 Creme Eggs, wrapping removed
  • 6 chocolate muffins
  • 60g caster sugar
  • 175g butter, cut into cubes
  • 4 tbs cocoa
  • 60g milk
  • 600g chocolate
Instructions
  1. Place muffins in Thermomix and blitz to crumbs for 20 seconds, speed 6.
  2. Empty into a mixing bowl
  3. Pour caster sugar into Thermomix and blitz for 20 seconds on speed 10
  4. Insert butterfly whisk
  5. Add butter, milk and cocoa powder
  6. Mix 3 minutes on speed 3
  7. Scrape down sides and mix 30 seconds speed 3
  8. Remove butterfly whisk
  9. Spoon half the buttercream mix into the reserved muffin crumb and stir with a spoon
  10. Continue adding buttercream until it becomes a malleable dough
  11. Take about a spoon full and slightly flatten on palm of hand, sit a Creme egg on top and then add similar amount of dough to cover the Creme Egg. Smooth down
  12. Place on greaseproof paper
  13. Repeat until all Creme Eggs are covered
  14. Place in fridge to set
  15. Wash Thermomix bowl and dry thoroughly
  16. Put chocolate, broken into pieces in Thermomix and blitz for 20 seconds on speed 10. Remove ⅓rds and put to one side
  17. Melt remaining ⅔rds of chocolate still in Thermomix for 6 minutes at 37 degrees on speed 2
  18. Scrape down sides and melt for further minute if needed
  19. Remove eggs from fridge and cover with melted chocolate, using a pastry brush to do the sides
  20. Sprinkle with the reserved grated chocolate
  21. Return to fridge
