An easy way to use up left over Christmas pudding

Ingredients
  • 200g of leftover Christmas pudding
  • 2 large cooking apples
  • 2 tbs of cranberry sauce
  • 100g butter
  • 200g plain flour
  • 150g demerara sugar
  • 50g ground almonds
Instructions
  1. Preheat oven to 180c
  2. Grease a large deep baking dish
  3. Rub the butter and flour together with finger tips until it resembles breadcrumbs, stir in sugar and almonds.
  4. (THERMOMIX METHOD: put flour, butter, almonds and sugar in the bowl and use Turbo mode five times until it resembles breadcrumbs)
  5. Break up the Christmas pudding into the crumble mix, stirring gently until all combined
  6. Peel, core and thickly slice the apples and tip on the cranberry sauce, mixing together with your hands to ensure all the apples are coated in the sauce.
  7. Spoon the crumble on top of the fruit
  8. Bake for 40 minutes, or until browned
  9. Serve with ice cream or cream
